meyer lemon & key lime curds

curd is such a horrid word.  just the sound of it makes you think of sour chunks of dairy product.  but this is lemon pudding sauce filling semi-gel stuff.  infinitely better than gone-off milk and comparably as awesome as wisconsin cheese curds. 

how to make lemon curd:
  • 3 eggs
  • 1/3 cup sugar
  • zest of 1 [or 2] lemons
  • 1/2 cup juice
  • 6 tablespoons butter
  • 1/2 teas vanilla






mix eggs, sugar, and zest until smooth.  add butter and juice and whisk the crap out of it over medium heat until thickened and bubbly.  
pour into sieve over conveniently sized bowl and scrape lightly with a spatula, then mix in vanilla.
discard zest and any accidentally cooked egg

repeat with key lime zest [and some gel coloring], key lime juice, and some lemon in case youre too lazy to juice 49 itty bitty key limes.
 
voila!  meyer lemon and key lime pudding type sauce stuff

  1. YUM YUM YUM. I love lemon curd. I don't like the word curd, but I do love lemon curd. My husband actually makes the best curds/puddings ever. yummy pie filling!

  2. my old roommate started making lemon curd last summer and i kind of missed it. i think my recipe is much easier than the one she was using, but its just about as good!
