spag & meatballs

of the semi-healthy chicken variety!

i say semi cos i used white [calcium fortified!] pasta and a significant quantity of oil to brown the meatballs.  buuuut whateves.  approximate recipe:

chix meatballs:
1 pound ground chicken
1/3 C panko [chipotle style]
2-3 T minced garlic
fresh basil, oregano, sage [fried up in butter]
1 egg lightly beaten
some portion of a can of corn
2 T tomato paste

smursh all that stuff together and form into balls.  i used a 1 1/2T cookie scoop which was ridiculously easy, browned them on all sides, and then dumped the not fully cooked meatballs into a pot with 1 can fire roasted [no salt added] tomatoes, 1/4 C balsamic vinegar, and some salt.  and boiled the ever loving crap out of it.  and fin!
