peanut butter pixies


growing up in the midwest.. peanut butter pixie day at lunch was the best friggin day of the week!  i googled my favorite childhood treat in the hopes there was an easy recipe at my fingertips.  weeell if i wanted to make 60 servings and could easily obtain over 3 pounds of peanut butter and a mixer that can handle it... i found my recipe.
seriously.  i dont have time for that math.  and powdered milk?  not so great for the lactose intolerants...aka moi.  fortunately i found bakerlady and her reeses peanut butter bars.  danger zone!

abridged peanut butter pixies:

  • 2 packets of plain graham crackers - run through food processor until the texture of sand
  • 1 cup melted butter
  • 2 cups powdered sugar
  • 1 cup creamy peanut butter

mix that shit up.  and try not to eat it straight out of the bowl.
press the ooey gooey mess into a parchment lined 9x12 pan.  the recipe pics clearly show a 9x9 but after perusing the comments, the bakerlady notes she did recalculate numbers for a 9x12 since that size pan is more common.  refrigerate pan while preparing next step
  • 2 cups chocolate chips
  • 1/2 cup creamy peanut butter
  • any melted butter remaining in the microwave safe container
heat the above ingredients in 30 second bursts, stirring well after each.  short microwave periods ensure the chocolate does not burn, while the addition of extra fat ensures the right texture remains in the melty chocolate.  also, it helps keep the top layer of the pixies soft for easy cutting and snarfing down like its the end of the world.
schmear warm chocolate atop the chilled peanut butter and chill until not shiny.  ie set.  like an hour
loosen the parchment layer and carefully lift the whole deal out of the pan.  i used a super sharp butcher knife to cut obsessively straight lines, and apparently made 32 slightly uneven pieces.  then since the whole deal was going to work with me the next day.. i popped everything back in the pan, parchment still intact. 
voila! and umm there wasnt even close to being a chance of leftovers, so don't even ask me how to store these puppers.
